The settings you are interested in are found on the Administration->Global settings page of the webui. In particular:
G-1600 Expire old data after this many days
This is the length of time a message will remain in the pending quarantine before it is automatically expired.
G-1700 Expire messages marked as spam after this many days
This is the expiry time for messages that are either trapped in the spam quarantine or are placed in the spam quarantine as the result of a message in the pending quarantine being rejected. (Note that this time is taken from when the message first came into CanIt not from when it was rejected.)
G-1800 Expire messages marked as non-spam after this many days
This is the expiry time for message placed in the non-spam quarantine as a result of accepting a message from the pending quarantine.(Note that this time is taken from when the message first came into CanIt not from when it was accepted.)
